Italian Tortellini Soup

It may now be spring, but here in Northern Michigan there is still snow on the ground and a chill in the air. This type of weather calls for my favorite comfort food, soup. As mentioned in my other favorite soup recipe on the blog, we are a soup family. We honestly would eat it every night if we could, and may do when I make a big batch? But whose judging?! There is nothing like a warm bowl of soup to brighten your spirits this time of year. The recipe I’m going to share with you is one of my absolute favorites and a staple in the Posey House. The first time I had this soup was in St. Louis made by my lovely Aunt Bridget. It was love at first  bite and I’m so happy I have the recipe. The flavors of the Italian sausage, red wine, Italian spices, and cheese tortellini are so heavenly together. Is your mouth-watering yet?!

In a frying pan, crumble the Italian sausage until completely cooked. Remove two tablespoons of the grease, leaving the rest with the sausage.

Add the onions and garlic; saute until the onions are translucent.

Remove the sausage mixture from the frying pan and transfer into a saucepan.

Add in the beef stock, diced tomatoes, tomato sauce, zucchini, and carrots. Stir the ingredients together.

Now for the best part. WINE. Pour in 1/2 cup of red wine. Don’t forget to pour yourself a glass as well. 😉

Add in dried basil, dried oregano, salt and pepper to taste. Stir.

Allow it to simmer on medium heat for 45-60 minutes.

Add the tortellini into the soup and allow it to simmer until they are tender, about 8-10 minutes.

 Garnish with Parmesan cheese and serve immediately.
