Chicken a la King, with a name like that I’m sure you are picturing a meal fit for a king. Though this meal is absolutely delicious don’t let the name fool you. I feel like I say this a lot about the recipes I post, but I’m not kidding when I say this one is SO easy. Not only is it easy, but this is the perfect meal for those cold winter nights. Simply put, this is comfort food. This particular recipe is my great Aunt Mary’s and it’s a family favorite. Every year on our birthdays, my mom makes our favorite meal and this was a frequent request many years in a row.
I recently purchased this GORGEOUS, Le Creuset pot and have been so anxious to use it. This was the perfect meal to break it in with!
First, assemble all of your ingredients.
Chop your celery, onion, and garlic cloves
In your pot, melt 1/2 stick of butter
Add the celery, onion, and garlic to the melted butter. Saute until tender.
Stir in flour.
Slowly add chicken broth and cream of chicken soup until mixture is thick.
Stir in chicken and peas. I prefer to use a rotisserie chicken. It’s the same great taste, without the hassle of having to cook it yourself.
Simmer on stove top for approximately 30 minutes, stirring frequently. Add salt and pepper to taste. You may need to add additional broth, if you desire a thinner consistency.
While the Chicken a la King is simmering. This is the perfect time to prepare the heavenly pastries. I use these, Pepperidge Farm Puff Pastry Shells. Preheat the oven to 425 degrees F.
Separate the pastries and place them on a cookie sheet. Bake in the oven for 18-20 minutes
You will know they are done when they look like this, golden and buttery! Don’t forget to take the tops out.
Serve chicken mixture over the pastry shells.
